Traditional Preparation

Each Margherita Classica is crafted with precision and care:

  1. Our dough is hand-stretched (never rolled) to preserve the air bubbles developed during fermentation
  2. San Marzano tomato sauce is applied in a spiral motion from the center outward, leaving a 1-inch border for the cornicione (crust edge)
  3. Fresh mozzarella is torn by hand into pieces and distributed evenly
  4. The pizza is slid into our wood-fired oven and rotated every 15-20 seconds
  5. At precisely 485°C (905°F), the pizza cooks in just 90 seconds, creating the signature leopard-spotted char
  6. Fresh basil leaves and a drizzle of extra virgin olive oil are added immediately after removing from the oven
  7. The pizza rests for 30 seconds before being sliced and served immediately

This method follows the strict guidelines of the Associazione Verace Pizza Napoletana (AVPN), ensuring an authentic Neapolitan experience.
